Butterscotch Blondies

When you have the afternoon tea munchies, try baking these scrumptiously sweet butterscotch bars from Outsider Tarts bakery

  • 175 g butter, softened, plus extra for greasing
  • 175 g light brown sugar
  • 115 g granulated sugar
  • 2 eggs
  • 230 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 300 g butterscotch chips
  • 150 g nuts, (optional)


1. Preheat the oven to 140C/gas 1. Grease a deep baking tray.

2. Beat the butter, brown sugar and granulated sugar in a large bowl until light and creamy. Add the eggs, beating well.

3. Stir together the flour, bicarbonate of soda and salt and gradually add to the butter mixture, beating until well blended.

4. Stir in the butterscotch chips and nuts, if using. Spread the mixture in the tray and bake for 30-35 minutes or until the top is golden brown and the centre is set. Cool completely in the tray on a wire rack, then cut into bars.
