Cajun Chicken Strips with Vegetable Brochettes

Cajun Chicken Strips with Vegetable Brochettes

Ingredients

  • 500 g chicken breast fillets, sliced into strips
  • black pepper
  • cajun rub
  • 115 g halloumi cheese, cubed
  • 8 button mushrooms
  • 2 courgettes, cubed
  • 1 red pepper, cubed
  • 1 yellow pepper, cubed
  • 8 vine tomatoes
  • salsa balsamica, to serve

Method

1. Season the chicken with salt and freshly ground pepper. Coat the chicken strips with the Cajun rub and set aside.

2. Preheat the grill.

3. Alternately thread the halloumi cheese, button mushrooms, courgettes, red pepper, yellow pepper and tomatoes onto skewers, making 8 kebabs in all. Season with salt and freshly ground pepper.

4. Grill the brochette on all sides until the vegetables and cheese start to colour.

5. Meanwhile, heat the oil in a heavy-based frying pan. Add the chicken strips and fry until browned on all sides and cooked through.

6. Serve the chicken strips with the vegetable brochettes and the salsa balsamica.
