Cajun fried salmon

Phil Vickery's cajun fried salmon is a quick and easy fish recipe served with a cool mint dressing

Ingredients

  • 4 x 175 g fillets of wild Alaska sockeye salmon
  • 4 tbsp olive oil

For the rub

  • 2 tsp dried thyme
  • 2 tbsp paprika
  • 1 tbsp black pepper
  • 3 tsp cayenne pepper
  • 2 tbsp garlic powder
  • 1 tsp celery salt
  • 1 tbsp ground seed coriander

For the dressing

  • 100 g fat-free natural yogurt
  • 10 g fresh mint, chopped
  • 10 g white wine vinegar
  • 2 g cracked black pepper
  • 2 tbsp honey

To serve

  • 75 g watercress

Method

1. Mix all the cajun rub ingredients together and rub onto one side of the fish.

2. Heat the oil in a frying pan and dust the fillets on to the flesh of one side with the 'rub'.

3. Add the fillets to the frying pan rub-side down and cook for 3-4 minutes, then flip over, and cook for a further 2 minutes. The fish should be pink and moist in the middle.

4. Put all the dressing ingredients in a bowl together and stir well.

5. Serve the fish with the yogurt dip and watercress on the side.
