A twist on the traditional Caribbean punch from Wayne Collins - rum combined with exotic juices and basil, topped up with ginger beer

Ingredients

Main

  • 10 ml fresh lime juice
  • 1 tbsp sugar syrup
  • 25 ml mango, juice
  • 25 ml pineapples, juice, pressed
  • 10 ml apricots
  • 10 ml rum, Puerto Rican
  • 4 basil, leaves, torn
  • 3 ice cubes
  • 150 ml ginger, beer,

Method

1. Place all the ingredients, in a cocktail shaker, with ice, shake well and strain into a sling glass.2. Top up with ginger beer and garnish with a pineapple leaf to serve.
