Carrot, Courgette and Coriander Soup

Go for triple the goodness with this tasty carrot, courgette and coriander soup, enriched with dried porcini mushrooms

  • 6 large carrots
  • 2 large courgettes
  • 2 tbsp dried porcini, soaked in warm water for 20 minutes
  • 1 leek
  • 2 cloves garlic
  • 1 red onion
  • 4 tbsp chopped coriander
  • 2 tsp olive oil
  • 1 litres chicken or vegetable stock


Place the onion, garlic and leeks in a pan with hot olive oil and allow them to soften for a couple of minutes. Then add the carrots, courgettes and porcini mushrooms in to the Big Chopper of your Braun handblender.

Add these items to the pan and cook until ingredients are reduced while continuing to stir. Once the mixture is thoroughly mixed, add the coriander and stir through.

Add the stock and allow the soup to simmer for 15 minutes. Finally remove from the heat and use the metal shaft attachment for the hand blender to blend the ingredients to a smooth consistency.
