- 700 g carrots, peeled and grated
- 1 lime, grated zest and juice
- 4 tbsp sweet chilli sauce, Thai
- 1 tsp fish sauce
- 3 cm ginger, peeled and grated
- small bunch mint, leaves shredded
1. Mix together the grated carrots, lime juice, zest, sweet chilli sauce, fish sauce, grated ginger and chopped mint.
2. Serve as an accompaniment to barbecued meats and fish.
