- Prep Time: 15 minutes plus at least an hr chilling

- 450 g carrots, peeled and grated
- 4 heaped tbsp caster sugar
- juice of 1 lemons
- good pinch of sea salt
- 1/4 tsp ground cinnamon
- 1 1/2 tbsp orange flower water
1. Put the carrots in a large bowl.
2. Add the sugar, lemon juice, salt, cinnamon and orange flower water.
3. Leave to chill for at least an hour in the refrigerator and serve.
