Make David Roccos delicious traditional Italian cake recipe using chestnut flour with raisins, pine nuts, orange and rosemary

Ingredients

  • 400 g chestnut flour
  • 2 tbsp sugar
  • 500 ml water
  • 4 tbsp extra virgin olive oil
  • 125 g raisins
  • 125 g pine nuts
  • 1 orange, zest

Method

1. Preheat oven to 200C/180C fan/gas 6.

2. In a mixing bowl combine the flour, sugar, a pinch of salt and water. Whisk the batter well until silky smooth in consistency.

3. Add the olive oil to a non-stick pie pan and heat in the oven for 5 minutes. Once the oil and pie pan are hot add the batter and evenly smooth out. Sprinkle the raisins, pine nuts, rosemary and orange zest on top.

4. Bake for 10-15 minutes or when the top is golden.
