Cheese fondue

Ingredients

  • 1 tbsp cornflour
  • 300 ml white wine, Swiss
  • 1 clove garlic
  • 200 g vacherin, ideally vacherin fiboureois cheese, grated
  • 200 g freshly grated gruy√®re cheese
  • 1 pinches salt and freshly ground white pepper

Method

1. Dissolve the corn flour in 150ml of wine and set aside.2. Put the fondue pan on a medium heat. 3. Pour in half the white wine and add the garlic. Bring to the boil. 4. Add the cheese, a handful at a time. 5. Pour in the white wine and cornflour mixture, and cook until hot, stirring constantly. Season with salt and white pepper. 6. Serve with bread, saussison sec and cornichons.
