Cheese & onion swirls

  • 625 g strong bread flour
  • 12 g salt
  • 75 g sugar
  • 20 g yeast
  • 320 ml water
  • 350 g butter
  • 1 tbsp vegetable oil
  • 200 g onions, finely chopped
  • 200 g cheddar cheese, grated
  • 1 eggs, beaten, for brushing


1. Place the flour, salt; sugar and yeast in a large mixing bowl, then, slowly mix in a little of the water until the dough becomes pliable.2. Place the dough on a floured surface and knead well until it feels elastic. Replace the dough in the bowl and leave in the fridge for 1 hour.3. Return the chilled dough to your floured work surface and roll it into a rectangular shape 60 x 30cm. 4. Now flatten the cold butter into a rectangle about 1cm thick and lay it over two-thirds of the dough. 5. Fold the unbuttered third of the dough into the centre, then fold over the buttered third of the dough, so that now your dough is in 3 layers.6. Return the dough to the fridge to chill for a further hour. 7. Roll out the dough on a lightly floured surface to a 60 x 30cm rectangle. Repeat the folding process, and return the dough to the refrigerator to chill for another hour. 8. Repeat this rolling, folding and chilling process twice more. The second time, wrap the dough in clingfilm and rest in the refrigerator overnight. 9. Roll out the chilled dough into a rectangle 4cm thick. 10. Heat the vegetable oil in a frying pan. Add in the onion and fry for 4 minutes, stirring often. Allow to cool. 11. Spread the fried onion and grated Cheddar evenly along the dough rectangle. 12. Roll up the dough over the cheese and onion lengthways, Swiss roll-style. 13. Slice the dough roll into 5cm thick slices. 14. Lay the slices on lined baking sheets (laying them down so that they resemble pinwheels) and rest for 1 hour. 15. Preheat the oven to 200ÂșC/gas 6. 16. Brush with beaten egg and bake for 20 minutes until golden and risen.
