Cheese Sticks

These easy-cheesy sticks from Amy Willcock are great to nibble on with pre-dinner drinks and make brilliant party food too

  • 60 g plain flour
  • half tsp mustard powder
  • half tsp baking powder
  • 55 g butter
  • 30 g fine breadcrumbs
  • 25 g ground almonds
  • 100 g mature cheddar cheese
  • black pepper
  • 1 egg yolk
  • 1 tbsp water

Tips and Suggestions

Aga method: Bake on the 2nd set of runners in the Roasting Oven for about 5-8 minutes, turning the sticks over when they are golden. You will have to watch them carefully. Turn the baking tray around half way through the baking time.


1. Set the oven to 200°C/gas 6. Sieve the flour, mustard and baking powder into a large bowl. Rub in the butter. Rub in the breadcrumbs, almonds and cheese and mix well. Beat the yolk with the water and stir into the dry mixture to form dough - do not over work.

2. Roll out the dough to a thickness of ½ cm and cut into sticks. Size depends on personal preference - the smaller and thinner the shorter the baking time.

3. Transfer the sticks on to a baking sheet lined with Bake-O-Glide or baking parchment. Bake for 8-10 minutes, until golden brown.

4. Cool on a wire rack and serve with drinks.
