Chestnut bread

Chestnut flour and walnut oil add a true taste of Autumn to this deliciously different bread from Paul Hollywood

  • 250 g flour
  • 250 g strong bread flour
  • 12 g salt
  • 25 g yeast
  • 50 g butter
  • 30 ml walnut oil
  • 290 ml water
  • 250 g chestnuts, vacuum packed, chopped


1. Put all of the ingredients in a bowl, apart from the chestnuts, and bind together. 2. Tip onto a floured surface and gently knead for five minutes. 3. Add the chopped chestnuts, return the mixture to the bowl and leave to rest for one hour. 4. Lightly grease a baking tray. 5. Knead the dough once more and then shape it and place on the baking tray. Leave to rest for a further hour. 6. Set the oven to 220C/gas 8. Bake the bread for 25 minutes or so, until the bread is cooked and sounds hollow when tapped on its base.
