Chicken and goats cheese burger

Andrew Nutter's chicken burgers have a surprise goats' cheese centre and are flavoured with ginger, chillies, cumin and coriander

Chicken and goats cheese burger

Ingredients

  • 1 tbsp olive oil, plus a little extra for drizzling
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 tsp ground cumin
  • 1 thumb fresh ginger, chopped
  • 2 tsp chillies, chopped
  • 400 g minced chicken breasts
  • 1 tsp chopped coriander
  • 1 egg
  • 50 g breadcrumbs
  • salt and black pepper
  • 1 handfuls flour
  • 100 g goats' cheese
  • 1 splashes olive oil

To serve

  • 4 bagel, toasted
  • 2 tbsp mango chutney
  • a few rocket
  • 1 lime juice

Method

1. Heat the olive oil and sweat the onion, garlic, cumin, ginger and chillies together until softened.

2. Stir into the minced chicken and add the chopped coriander, egg, breadcrumbs and salt and pepper.

3. Flour a chopping board and shape the mixture into four balls. Insert a slice of goats' cheese in the centre of each and shape into a burger. Refrigerate until needed.

4. Drizzle the burgers with a touch of olive oil and barbecue until cooked through.

5. Serve on toasted bagels covered with mango chutney. Top with rocket leaves and a squeeze of lime.
