Chicken finger sandwiches

Chicken finger sandwiches

  • 6 slices bread
  • 1 stick of celery, finely chopped
  • ΒΌ bunch of chives, finely chopped
  • 4 tbsp pine nuts
  • 1 poached chicken breast
  • The zest of half a lemons
  • 2 tbsp mayonnaise


1. Add chopped chicken breast, pinenuts, celery, lemon zest, chives, mayonnaise, salt and pepper to a large bowl and combine all ingredients.

2. To assemble sandwiches, spread chicken mixture on one side of bread and place another piece of bread on top. Continue with the other slices of bread. Remove crust and cut the sandwiches in half to create soldiers. Serve
