Chimichurri

Ingredients

  • generous bunch flat leaf parsley, leaves only
  • 120 ml extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tbsp limes, juice only
  • 3 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp fresh oregano

Method

1. Blend all the ingredients together in a food processor to a coarse paste. Taste for seasoning.

2. Use this sauce soon after you've made it - it's much better fresh.
