  • 50 g butter, melted
  • 135 g caster sugar
  • 210 g dark chocolate
  • 5 eggs, separated
  • 25 g orange chocolate chips
  • 1 tsp orange zest

To serve

  • Grand Marnier ice cream
  • sugar decorations


1. Preheat the oven to 180C/gas 4.

2. Melt 25g of the butter and brush it all over the inside of 8 ramekins. Tip 25g of sugar into the first ramekin and tap it around the sides until they are lightly coated. Then tip the excess into the next ramekin and repeat. Continue until all the sugar is used and the inside of each ramekin is crusted.

3. Melt the chocolate and another 25g of butter together in a heatproof bowl. Stir in the egg yolks.

4. In a large, clean bowl, whisk the egg whites and the remaining 110g sugar together until stiff peaks form. Fold the egg whites into the chocolate mixture along with the orange chocolate chips and orange zest.

5. Spoon the soufflé mixture into the ramekins and bake for exactly 11 minutes. Serve immediately with the ice cream and sugar decorations.
