Chocolate biscuit cake

Chocolate biscuit cake

  • 110 g dark chocolate
  • 335 g unsalted butter
  • 2 eggs, lightly beaten
  • 65 g caster sugar
  • 50 g cocoa powder
  • 400 g plain all-butter biscuits, broken by hand into 1cm pieces


1. Melt the chocolate and butter together in a microwave oven or in a heatproof bowl over hot water. Allow to cool, then add the eggs, sugar and cocoa powder and stir well. Gently mix in the biscuit.

2. Line a loaf tin with cling film and pour in the mixture, pressing it down slightly. Chill in a refrigerator for at least 6 hours or preferably overnight. Serve with whipped cream or any other topping of your choice.
