Dip these biscotti into a glass of vin santo for an Italian style after dinner delight

  • 250 g plain flour
  • 250 g caster sugar
  • 2 tsp baking powder
  • 50 g pistachio nuts
  • 50 g dried apricots, chopped
  • 50 g dried cherries
  • 50 g chocolate chips
  • 50 g whole almonds
  • 3 eggs, lightly beaten

Tips and Suggestions

This recipe tends to make wide biscotti so you'll get nice long slices.


1. Preheat the oven to 200C/180C fan/gas 4. Mix together the dry ingredients, then gradually stir in the eggs and mix by hand - you may not need all the egg to combine it.

2. Divide the mixture into two. On a floured surface, quickly roll the mixture into two logs. Gently transfer to a lined baking sheet and bake for 8-10 minutes.

3. Allow the two logs to cool slightly, then slice into thin slices and bake again at 160C/150C fan/gas 3 for 4-5 minutes. Leave to cool and serve.
