Chocolate pots

These gooey little fondants from Georgie and Caroline Parker make an ideal dinner party dessert

  • 200 g dark chocolate, broken into chunks
  • 200 g butter
  • 2 tbsp brandy
  • 4 large eggs
  • 4 large egg yolks
  • 110 g golden caster sugar
  • 1 1/2 tsp vanilla extract
  • 60 g plain flour, sifted


1. Preheat the oven to 200C/gas 6. Melt the chocolate with the butter and brandy in a mixing bowl over a pan of simmering water, stirring regularly until smooth. Remove from the heat and leave to cool slightly.

2. Whisk the eggs, yolks, sugar and vanilla extract together in a large bowl until you have a thick, mousse-like mixture.

3. Pour the cooled chocolate into the egg mixture, and stir gently to combine. Carefully fold in the flour until no lumps remain and divide the mixture between 6 ramekins. Place them on a baking tray and bake for 12 minutes, until the tops feel set, but the inside is still gooey. Serve warm.
