Andrew Nutter makes chocolate-filled wontons as an unusual dessert canapé

For the filling:

  • 120 g butter
  • 120 g caster sugar
  • 2 eggs
  • 120 g ground almonds
  • 25 g plain flour
  • 1 tsp cocoa powder
  • 25 g chocolate chips

For the wontons:

  • 1 packets wonton wrappers
  • 1 egg, beaten
  • vegetable oil, for deep frying
  • icing sugar, for dusting
  • raspberry coulis, to serve


1. Cream together the butter and sugar. Add the eggs, ground almonds, flour, cocoa and chocolate chips and mix well. Put in fridge for 30 minutes to firm.

2. Put a small spoonful of the mixture in the center of each wonton wrapper. Brush the edges with a little beaten egg and bring them around the mixture and pinch together.

3. Preheat the oven to 180C/gas 4.

4. Heat the oil in a large pan. Fry the wontons, a few at a time, until a light golden and finish in the oven for 2-3 minutes.

5. Serve with a dusting of icing sugar and the raspberry coulis.
