Cinnamon eggy bread soldiers

Ingredients

  • 3 eggs
  • 100 ml double cream
  • 100 ml milk
  • 1/2 tsp ground cinnamon
  • 4 thick slices white bread
  • 275 g butter
  • 300 ml Greek yogurt
  • 300 g raisins
  • 4 tbsp lavender honey, or clear honey

Method

1. Whisk together the eggs, cream, milk and cinnamon. Dip each slice of bread in the mixture and stack on a plate

2. Heat half the butter in a large non-stick frying pan. When the butter is hot, add 2 slices of bread and fry for 2-3 minutes on each side, until golden brown. Repeat the process with the remaining slices. Cut each slice of eggy bread into 5 'soldiers'.

3. Serve the soldiers with a large dollop yogurt sprinkled with raisins. Drizzle honey over everything.
