- 500 g caster sugar
- 650 ml water
- 3-4 cinnamon sticks
1. Place the sugar and water in a saucepan and heat, stirring now and then, until the sugar dissolves.
2. Bring the liquid to the boil and add the cinnamon sticks. Bring back to the boil and cook briskly for 1 minutes.
3. Skim with a spoon to remove any skin that?s formed. Let the syrup cool and pour into a jar.
4. Cover the jar and refrigerate for 3-4 weeks before using.
