Cocktail oysters

Sweet, creamy and with a hint of chilli, this sea-fresh oyster recipe from David Coward-Talbot makes a refreshing addition to cocktail parties

Ingredients

  • 12 Pacific oysters
  • 2 tbsp soured cream
  • 2 tbsp sweet chilli sauce
  • 2 tbsp chopped coriander
  • 2 slices smoked salmon
  • 2 tbsp caviar

Method

1. Prise open the oysters and keep on ice.

2. Spoon a dollop of sour cream on top of each one.

3. Top 6 oysters with a dab of sweet chilli sauce and a sprinkling of coriander.

4. Finish the others with a sliver of smoked salmon and a small heap of caviar.
