Ingredients

  • 200 ml coconut milk
  • juice of 3 limes
  • 350 g basmati rice, washed

Method

1. Place the rice in a saucepan with the lime juice and coconut milk. Add enough water to just cover the rice and bring to the boil. Simmer for 5 minutes.

2. Place the lid tightly over the pan and leave for 15 minutes.

3. Fluff with a fork and serve immediately.
