Coffee butter icing

Try slathering an ordinary ginger loaf with Paul Rankin's decadent coffee-rich icing for a pick-me-up afternoon treat

Coffee butter icing

Ingredients

  • 100 g butter, softened
  • 200 g icing sugar, sifted
  • 4 tbsp cooled strong coffee
  • 1 tbsp milk
  • 1 loaf ginger cake
  • sugar syrup, to taste

Method

1. Beat the butter in a bowl with a wooden spoon until light and creamy.

2. Add the sifted icing sugar and the coffee and beat until smooth. If the mixture is too thick, add the milk and beat again until smooth and creamy.

3. Spread the icing over the ginger loaf and drizzle with some sugar syrup.

4. Serve the ginger loaf in slices.
