Ingredients

  • 4 mint leaves
  • 1 large pinch caster sugar, or to taste
  • 1 lime, juice only
  • 30 ml cognac
  • 15 ml limoncello liqueur
  • ice cold sparkling water, to top up

Method

1. Bruise the mint leaves in a highball glass with the sugar and lime juice.

2. Half-fill the glass with crushed ice and pour over the cognac and limoncello. Top up with sparkling water, stir to mix, and serve.
