Ingredients

  • 1 bunches coriander
  • 750 ml sparkling wine, sweet, preferably Asti Spumanti, chilled
  • 1 limes, juice

Method

Tie the coriander to secure in place before bruising the leaves and stems with the flat blade of a knife. This helps extract the maximum flavour. In a pitcher, infuse the coriander with the wine for 10 minutes or so. Sharpen with lime juice, stir well and pour into six wine glasses.
