Tips and Suggestions
Padrón peppers originated in the eponymously named region in northwest Spain, where they are said to have been cultivated for over 400 years. Sweet in flavour with the occasional spicy specimen, simply frying and sprinkling with salt make them a fantastic nibble to serve with drinks.
1. Heat the oil in a large frying pan on a high until very hot and beginning to shimmer.
2. Add the peppers (be careful as the oil may spit at this point), stir for a minute until the peppers blister and brown a little. Tip onto a serving plate.
3. Sprinkle the peppers with sea salt and serve hot.
