- 250 g green olives, pitted
- 125 g shelled walnuts
- 2 tbsp finely grated parmesan
- 1 tbsp olive oil
- black pepper
1. Put the olives and the walnuts in a food processor. Blend on full power for 30 seconds.
2. With the food processor still running, gradually add the grated Parmesan cheese and olive oil forming a paste that is thoroughly mixed but retains a gritty crunch.
3. Season with salt and freshly ground pepper.
