Crisp Bacon Salad

A honey, lime and sesame dressing gives this bacon salad a lovely South East Asian twist

  • 8 rashers streakyback bacon
  • 2 large handfuls green salad
  • 8 spring onions, sliced

For the dressing

  • 4 limes, juice only
  • 8 tbsp Irish wild honey
  • 4 tbsp sesame oil


1. Dry fry the bacon in a medium frying pan until crisp and golden-brown.

2. For the dressing: whisk together the lime juice, honey and sesame oil in a small bowl.

3. Put the salad leaves in a serving bowl, sprinkle with the spring onions and top with the hot bacon. Season to taste and drizzle over the dressing. Serve at once.
