Croque Monsieur Bites

Jo Pratt's mini golden cheese and ham toasties take the hassle out of preparing hot canapés

  • 8 slices white bread
  • soft butter, for spreading
  • 2 tsp Dijon mustard
  • 200 g cheddar cheese, finely grated
  • 4 thin slices ham
  • freshly ground black pepper
  • olive oil
  • tomato relishes, to serve


1. Butter both sides of the bread and scatter half of the cheese over one side of four of them. Lay the ham on top, and then scatter over the remaining cheese and season with black pepper. Spread the mustard onto one side of the remaining 4 pieces of bread, place on top of the cheese topped bread, and then press down firmly.

2. Heat a good drizzle of olive oil in a large frying pan over a medium heat. Place the sandwiches in the pan (you may need to do one at a time, depending on the size of your pan). Leave for 1 to 2 minutes until the base is golden and the cheese is starting to melt. Turn over and cook for a further minute, or until golden.

3. Remove from the pan and leave to cool for 5 minutes to make the croque-monsieurs easier to cut. Cool slightly and cut into bite-size cubes with or without crusts, depending on your preference.

4. Serve with cocktail sticks and a dish of tomato relish to dip into.
