Deep fried mozzarella with tomato sauce

  • 8 slices white bread, thin slices
  • 200 g mozzarella, sliced into 4
  • 2 eggs
  • 1 pinches black pepper
  • 125 ml milk
  • 500 ml olive oil, for frying

For the sauce

  • 1.5 kg tomatoes
  • 4 tbsp olive oil
  • 1 onions, very finely sliced
  • 1 clove garlic, coarsely chopped
  • 1 bunches oregano, finely chopped
  • 10 leaves basil


1. Cut the crusts off the bread. 2. Beat the eggs and season with salt and freshly ground black pepper. 3. Dip the slices of bread on one side into the milk and then place a slice of mozzarella on the dry side.4. Season the mozzarella and make a sandwich with another slice of bread, milk soaked side on the outside. 5. Dust the sandwich with flour and then soak in the beaten egg. 6. Heat the oil in a deep fat fryer and fry the sandwich until golden and crisp. The mozzarella filling should have begun to melt on the inside. 7. In the meantime, make the tomato sauce. Plunge the tomatoes into boiling water for one minute to loosen the skin. Remove the skin, cut the tomatoes in half. Discard the inner liquid and seeds. Coarsely chop the remaining flesh.8. Heat the oil in a pan and fry the onion for five minutes.Add the garlic and fry for a further minute. Add the tomato and bring to the boil.9. Stir in the oregano, and then reduce the heat and simmer for 30 to 40 minutes, adding the shredded basil leaves after 20 minutes. 10. Season to taste with salt and freshly ground black pepper, and serve immediately with the hot mozzarella sandwich.
