Ed Baines's fruity marinade is the ideal way to liven up baby spare ribs for a delicious barbecue-style meal

  • 16 baby back pork ribs

For the marinade:

  • 100 ml tomato ketchup
  • 100 ml brown sauce
  • juice of 1 limes
  • dashes of tabasco
  • 5 tbsp cola
  • good dash of Worcestershire sauce
  • shake of celery salt


1. Place all of the marinade ingredients in a large mixing bowl and mix together thoroughly. Place the pork ribs in a shallow dish and pour over the marinade, turning to coat. Leave in the refrigerator to marinate for at least 1 hour, or preferably overnight.

2. Preheat the oven to 200°C/gas 6. Transfer the ribs to an ovenproof dish, spoon over the marinade and bake in the centre of the preheated oven for 30-40 minutes, turning once, until a deep reddish brown. Serve.
