Dorset apple cake

Lesley Waters's apple cake, flavoured with marzipan and lemon and served warm from the oven, makes a truly scrumptious dessert

  • 225 g self-raising flour
  • 110 g butter, diced
  • 110 g caster sugar
  • 3 apples
  • 1 grated lemon zest
  • 110 g marzipan, chopped
  • 2 eggs, beaten
  • 1 tbsp icing sugar, for dusting


1. Preheat the oven to 180ºC/gas 5. Grease and line a 20cm cake tin with bakewell paper. 2. Place the flour in a large bowl. Rub in the butter into the flour until it resembles rough breadcrumbs. Stir in the sugar, chopped apple lemon zest and marzipan. 3. Add the beaten egg and combine together. Tip into the prepared cake tin and bake for 35-40 minutes until golden. 4. Cool slightly in the tin and serve warm, lightly dusted with icing sugar, with vanilla ice cream or thick cream.
