Duck Eggs with Summer Truffles

Ingredients

  • 2 tbsp duck fat
  • 4 duck eggs
  • 1 summer truffle
  • hot buttered toast, to serve

Method

1. Heat the duck fat in a large frying pan, break in the eggs and cook to your liking.

2. Remove from the pan and divide between 2 plates. Shave or grate the truffle over the top and serve with hot buttered toast.
