- 1 tsp olive oil
- 2 large eggs
- 1 tsp chopped chives, chervil or tarragon
1. In a small bowl, beat the eggs and stir in the herbs. Season well with salt and pepper.
2. Heat the oil in a small frying pan, then pour in the eggs. Using the back of a fork, stir the mixture, dragging the cooked egg from the edges of the pan into the centre to ensure an evenly cooked omelette.
3. Once the egg is completely set, turn out and serve.
