Falafel burgers

Simon Rimmer's delicious falafel burgers are packed with parsley, coriander and mint

Falafel burgers

Ingredients

  • 1 x 400 g can chickpeas
  • 1 red onion, finely chopped
  • clove garlic, crushed
  • 1 tbsp parsley
  • 1 tbsp coriander
  • 1 tbsp mint
  • 1 pinches ground cinnamon
  • olive oil, for brushing
  • salt and black pepper
  • 1 tbsp flour

To serve

  • poppy seed rolls
  • lime mayonnaise
  • rocket
  • cherry tomatoes
  • pickled jalapeƱo peppers

Method

1. Using a food processor, pulse the chickpeas, herbs, spice, seasoning and flour until fairly smooth.

2. Mould the mixture into medium sized balls, brush with oil and barbeque for three minutes each side.

3. Serve in poppy seed buns with lime mayonnaise, rocket, cherry tomatoes and pickled jalapeƱos.
