Savoury and sweet ingredients combine to delicious effect in this unusual French dish from Stephane Gassot

  • 9-10 rashers bacon
  • 1 tbsp butter
  • 1 onion, finely chopped
  • 100 g prunes, stones removed
  • 100 g raisins
  • 2 large potatoes, coarsely grated
  • black pepper
  • 5 tbsp crème fraîche


1. Set the oven to 180°/gas 4. Cut 3 rashers of bacon into small dice or lardons. Lay the remaining bacon evenly over the bottom of a medium sized casserole dish with a lid.

2. Melt the butter in a frying pan over a medium heat and add the onion and bacon lardons. Cook until the bacon is golden brown and the onion soft. Transfer to a large bowl and stir in the prunes, raisins and potatoes and season well with salt and freshly ground black pepper.

3. Stir in the crème fraiche, and spoon the mixture over the bacon slices. Place the lid onto the dish and stand the dish in a roasting pan filled with hot water. Transfer to the oven and cook for 3 hours.
