Farmhouse sausages with mash potatoes and sticky onions

Its hard to beat this sausage supper from Harkers Farm Shop, served with smooth mash and a generous dollop of sticky onion gravy.

Farmhouse sausages with mash potatoes and sticky onions

  • 3 large potatoes, peeled and quartered
  • 25 g unsalted butter
  • 25 g soured cream
  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 4 pork and leek sausages
  • 1 tsp brown sugar
  • 100-150 ml madeira


1. Boil the potatoes for 15 minutes until soft then drain. Pass through a sieve twice, then beat in the unsalted butter and sour cream. Season with a pinch of salt and white pepper.

2. Heat 1 tablespoon on oil in pan, add the sausages and turn regularly so they cook evenly on all sides, about 10 minutes.

3. In a separate pan, add the remaining oil, and saute the onion over low-medium heat. Once the onions are soft and lightly golden, sprinkle the brown sugar and pour in the Madeira. Stir until the onions have a sticky consistency. Season to taste.

4. Serve the mash with the sausages and finish with onion gravy poured over the sausages.
