  • 4 sheets of filo pastry
  • 4 fresh figs
  • 1 heaped tbsp of soft goats cheese
  • 1 tbsp of low fat crème fraiche
  • 1 tbsp of toasted pine nuts
  • Black pepper
  • 2 tbsp of melted butter
  • Agave nectar
  • Black sesame seeds

Tips and Suggestions

This recipe makes 8 pastries.


1. Preheat the oven to 180C

2. Finely chop the figs and mix with the goats cheese, crème fraiche and pine nuts and season with black pepper.

3. Lay a piece of filo pastry out in front of you like a piece of A4 paper, portrait ways. Fold in half horizontally and then cut in half vertically. Repeat this process with all sheets of filo and keep them under a damp kitchen towel to prevent them drying out.

4. Take one piece of filo, keep it folded in half and lay out like a portrait A4 piece of paper in front of you. Spoon a teaspoon of the mixture onto the bottom left hand corner and fold the bottom corner up diagonally. Repeat this process with all the pieces of filo, always folding the bottom corner up diagonally until you have a triangle shaped borek. Seal with a little melted butter and brush the top with melted butter too. (If you find this technique a bit tricky, lay the filo out as above, spoon a little mixture onto the bottom, bring the left and right side in and roll up to create a brick shape).

5. Repeat the process with all the boreks and then pop onto a non-stick baking tray. Brush with a little melted butter and bake in the oven for 20- 25 minutes until golden brown.

6. Remove from the oven and onto a platter, drizzle with agave nectar and scatter with black sesame seeds and serve immediately.
