For the figs

  • 12 figs
  • 250 g goats' cheese, mild and creamy
  • 12 slices parma ham
  • olive oil

For the radicchio rolls

  • 100 g ricotta cheese
  • 100 g parmesan
  • 100 g goats' cheese
  • 2 tbsp olive oil

To serve

  • extra virgin olive oil
  • balsamic vinegar

1. First prepare the figs. Using a sharp knife, cut a cross into the top of each fig and stuff with the goats' cheese.

2. Wrap the parma ham around each fig and drizzle with oil. Heat a griddle or barbecue and cook the figs for about 2 minutes on each side.

3. Make the radicchio rolls. Combine the ricotta, parmesan and goats' cheese. Put a spoonful of mixture in the centre of each radicchio leaf, roll up like a cigar, and secure with cocktail sticks. Drizzle with oil and cook on the same griddle (or on the barbecue) for 2 minutes. Slice in half if liked.

4. Drizzle the figs and lettuce rolls with olive oil and balsamic vinegar before serving.
