Flambéed Mangosteen and Rambutan Salad

Flambéed Mangosteen and Rambutan Salad

  • 30 g butter
  • 3 mangosteens, segmented
  • 4 rambutans, stones removed, and cut into chunks
  • 2 pieces preserved stem ginger, cut into fine julienne
  • 3 tbsp orange liqueur
  • 3 tbsp stem ginger syrup


1. Heat a frying pan over a medium-high heat and add the butter. When the butter begins to foam, add the mangosteen, rambutan and ginger. Stir fry for 1-2 minutes until heated through.

2. Add the orange liqueur and tip the pan towards the heat so that the liqueur is set alight. Once the flames have subsided, add the ginger syrup. Swirl to combine and serve immediately.
