French Onion Soup

Slow cooked onions make a fabulous foundation for this tasty version of the traditional French speciality from Mike Robinson

French Onion Soup

  • 6 tbsp butter
  • 10 onions, chopped
  • 50 g plain flour
  • 1 tbsp tomato purée
  • 50 ml white wine
  • 1 litres chicken stock
  • 100 g gruyère cheese, grated
  • 4 slices French bread, toasted


1. Melt the butter in a large saucepan over a low heat and cook the onions for 30 minutes until softened, stirring constantly.

2. Add the flour, tomato puree, wine and chicken stock. Cook for a further 30 minutes. Season to taste with salt and freshly ground black pepper.

3. Scatter the grated cheese over the toasted French bread slices and grill until the cheese is golden and bubbling. Serve the soup immediately, with a piece of cheese topped toast floating on the top of each.
