Fruit and date skewers with chocolate fondue

  • 4 bananas
  • 1 pineapples, cored and cut into chunks
  • 16 fresh medjool dates, stoned
  • 6 star-fruit, sliced into 16 or substitute with kiwi fruit
  • 16 drops marshmallows
  • 250 g chocolate
  • 125 ml double cream
  • 2 tbsp dark rum


1. Skewer one piece of each fruit onto the skewers finishing with the star fruit and marshmallows. Keep refrigerated until you are ready to serve. 2. Take a piece of florist's foam (from any florists) and place in a medium sized square vase (it should be significantly shallower than the skewers). Cover the top of the foam with banana leaf or kitchen foil. If you are using a glass vase, cover the whole thing with banana leaf or foil. 3. Place the chocolate, cream and rum in a bowl over gently simmering water and stir until melted (or use a fondue). 4. To serve, arrange the skewers in the vase as with a floral arrangement and serve with bowls of the chocolate fondue.
