Gammon with egg and cheese sauce

Gammon with egg and cheese sauce

  • 55 g butter
  • 55 g flour
  • 150 ml milk, warmed
  • 0.5 tsp nutmeg, grated
  • 55 g cheddar cheese, grated
  • 3 hard-boiled eggs, quartered
  • 1 gammon, steak
  • 0.5 tsp cayenne pepper
  • 2 tbsp parmesan, grated


1. Heat the butter in a heavy-based saucepan. 2. Stir in the flour and cook gently, stirring, for 1-2 minutes. 3. Gradually add in the warmed milk, stirring well as you do so. Cook, stirring, until the mixture has thickened into a white sauce. 4. Add the nutmeg and Cheddar cheese, stirring well. Cook gently until the cheese has melted. 5. Preheat the grill. Top the gammon steak with the hard-boiled egg quarters. Spoon over the cheese sauce, sprinkle with the cayenne and Parmesan and cook briefly under the grill until glazed. Serve at once.
