Gin and tonic jelly

  • 5 sheets gelatine
  • 1 tbsp caster sugar
  • 300 ml gin
  • 300 ml tonic water
  • 1 sheets gold leaf


1. In a bowl, break up the gelatine leaves and add the sugar. Pour over cold water to cover, stir and leave to soften for 5 minutes.

2. While the gelatine is softening, mix together the gin and tonic.

3. Once the jelly has softened, put the bowl over a pan of boiling water and stir to melt. This will take about 5 minutes.

4. Put the melted gelatin into gin and tonic solution. Then add the gold leaf, and mix it to break it up. Put it in the fridge for 6 hours to set.
