Gluten free carrot cake

Grated carrot always makes for a very moist cake. Doves Farm add raisins and a creamy topping to make their gluten free recipe all the more enticing

  • 2 eggs
  • 100 g brown sugar
  • 100 g butter
  • 1 tsp vanilla extract
  • 150 g grated carrots
  • 100 g raisins
  • 50 g mixed candied peel
  • 150 g gluten free self raising flour

For the topping (optional)

  • 150 g cream cheese
  • 50 g icing sugar
  • 1 tsp vanilla extract

Tips and Suggestions

The flavour of this cake improves after several days in a tin.


1. Preheat the oven to 180C/160C fan/gas 4. Grease and line an 18 x 25cm baking tray.

2. Beat together the butter and sugar until creamy, then slowly mix in the eggs and vanilla extract.

3. Add the carrots, raisins, candied peel and flour. Stir until combined.

4. Pour the mixture into the tray and bake for 40-45 minutes, or until a skewer placed into the middle of the cake comes out clean. Leave to cool completely on a wire rack.

5. For the topping: mix all the ingredients together, then spread it over the cooled cake straightaway.
