Goan Sausage and Herb Salad (Goenchi Koshimbir)

Ingredients

  • 150 g chorizo sausages, or chourico (Goan sausage)
  • 1 large tomato, sliced
  • 1 red onion, sliced
  • 2 tbsp lemon-and herb-infused olive oil
  • pinches of salt
  • pinches of sugar
  • 2 tbsp coriander leaves, chopped

Method

1. Combine the sausage, tomato, onion and oil in a salad bowl.

2. Season with salt, sprinkle in the sugar and scatter over the chopped coriander. This salad is best served straight away.
