Gravad lax open sandwich

Ingredients

  • 2 loaves ciabatta bread, sliced in half lengthways
  • olive oil, for drizzling
  • 100 g mascarpone
  • 8 slices of gravadlax
  • 1 bunch of rocket
  • juice of 1 lemons

Method

1. Preheat the grill.

2. Drizzle the ciabatta with olive oil and grill until golden brown.

3. Spread each ciabatta half with the marscapone cheese and top each portion with 2 slices of gravad lax.

4. Top each portion with rocket and drizzle with lemon juice and olive oil. Season with salt and freshly ground pepper and serve at once.
