- 250 g green beans, topped, blanched and refreshed
- 1 packets pickedleaves watercress, washed
- 55 g pistachio nuts, coarsely chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp lime juice
1. Place the blanched beans, watercress and pistachio nuts in a bowl.
2. Whisk together the olive oil and lime juice, season with salt and pepper and toss with the salad.
3. Serve immediately.
